I’m happy to report that along with exercise and eating healthier…I’m down 10 pounds! So here’s what’s on the menu this week. Again these are mostly dairy-free and kid friendly meals. Have a good one…and may you stay healthy!
MONDAY – Spaghetti! Going to try to make sauce from scratch with whole wheat pasta. I’ll let you know how the sauce turns out, I usually just buy Gia Russa.
Lower Carb Meal Option: Zoodles (Zucchini Noodles)
TUESDAY – Yellow Rice and Chicken with peas. We use Vigo yellow rice…yum! (It’s a HEAT Finals game, so the kids will be dining solo.)
WEDNESDAY – Zesty BBQ Crock Pot Chicken Sliders. I made this a few weeks ago and froze a portion. Will serve this with corn on the cob and coleslaw. Salad for me!
THURSDAY – Pizza night. (Another HEAT Finals game.)
FRIDAY – Tex Mex Rice Bowl. Just found this recipe…looks divine!
SATURDAY – Eating out Night!
SUNDAY – Father’s Day! Gotta make my hubby his favorite…Chicken Parmesan with angel hair and roasted asparagus.

This Tex-Mex Rice Bowl recipe looks very similar to one of my absolute faves: Q’doba Grill’s Mexican Gumbo. LOVE that dish! I ate it so much during both pregnancies — and, remarkably haven’t tired of it since — that it is a miracle that my children didn’t come out with maracas and a sombrero on.
