I don’t know about you…but I’m still stuffed from Easter dinner! Can you say carb overload? So I’m thinking about keeping things light and simple this week. Plus it’s Spring Break for my preschooler, so I will need to be extra prepared.
By the way, did anyone else try this Crunchy Garlic Chicken last week with cornflakes as the crust? Both of my girls gobbled them up, and ate leftovers. Amen!
MONDAY – Leftovers! Ham, and sweet potatoes, and corn souffle oh my!
TUESDAY – Spinach and Strawberry Salad with Grilled Chicken. The kids will eat chicken, strawberries, and a vegetable.
Lower Carb Meal Option – I sub less sugar dressing like Balsamic for me.
WEDNESDAY – Since my kids love tortillas now (not hard tacos), I’m going to try Loaded Burritos with a side of black beans and rice. This is easy and quick to throw together!
THURSDAY – Barbeque time…Black Bean Turkey Burgers and corn on the cob, using leftover black beans from the night before.
FRIDAY – Pizza Night!
SATURDAY – Brinner night (aka breakfast for dinner!). My kids devour these homemade pancakes from Cooking Light. I make a double batch and freeze them for breakfasts for the week. I also sub whole grain flour, and a little almond milk.
SUNDAY – Getting bold, time to try Perfect Roast Chicken with Vegetables and Lemon Pan Sauce. Love this website Love and Duck Fat by the way…gorgeous photos!

Your menu for the week sounds totally delicious! I’ve never tried breakfast for dinner (love the word brinner!) but it sure seems like it would be fun 🙂 I usually do my meal planning as I’m shopping. I should be better organized.
