It’s hard to believe that we’ve been meal planning for six weeks! That’s major consistency for the Hewitt house…and with my hubby traveling a bit less, it means even more time now to cook healthier meals! You see May for me is ‘get healthy and strong month’…it’s time to make time for workouts, cut sugar and processed foods, and just feel better. That’s why I was so excited to receive a new meal planner from Carrie Elle.
You see, I’m old, and totally old school. I like to write things down, and see it on paper. I’ve tried computer calendars, but I never stick to them. What I love about Carrie’s meal planner is you can plan for the month…or the week. And right next to your menu she has a perforated grocery list you can just tear out and take to the store. You can also tear out the menu and post on the fridge, which is really helpful for my hubby and babysitter. Sometimes the simple things are so genius! Here’s our weekly menu, with my “eat clean” modifications. We are also mostly dairy free, but I’m cutting sugar (God help me), and a lot of wheat products.
TUESDAY – Spaghetti for the kids with broccoli and spinach mixed into the meat sauce. Gotta hide the veggies!
WEDNESDAY – 20 Minute Grilled Garlic Lemon Chicken with sweet potato slices and asparagus.
THURSDAY – Asian Stir Fry with brown rice. I am going to attempt to make the sauce from scratch, but you can buy stir fry sauce to simplify.
FRIDAY – Pizza Night for the kids, and black bean, corn and avocado salad for grown ups!
SATURDAY – BBQ night! Simple burgers, corn on the cob, and watermelon.
SUNDAY – Happy Mother’s Day! Can’t wait to see what my husband comes up with…if he remembers.
MUFFIN MONDAY: Every Monday I bake muffins for our girls for snacks or breakfast. I just stumbled across this recipes for Whole Wheat Strawberry Muffins. I am salivating just looking at this…ho-lee-cow!
