Happy Memorial Day! Chances are everyone is cooking out right now….which is what I wish we were doing! Unfortunately for our girls we are in the midst of the Eastern Conference Finals, and we are working the HEAT game tonight. So this week I have to keep things simple as I work all 5 days (including today) between the Marlins and Miami HEAT. Never a dull moment!
Here’s what’s on the menu – with mostly dairy free options!
MONDAY – Homemade crunchy garlic tenders and corn on the cob the kiddos, with some fruit on the side. I make these in big batches and freeze, then defrost and pop in the oven. Such a huge time saver.
TUESDAY – Marinated Grilled Chicken , green beans and couscous for the girls. No grains for mama at night! (btw, this is already in the fridge for tomorrow…yum!)
FRIDAY – Pizza night for my hubby and the girls. This is usually a salad night for me!
SATURDAY – Let’s be real…after working all week, I’m not cooking. Eat out night!
SUNDAY – I’ve always wanted to try this spicy shredded pork recipe from the Pioneer Woman. Hope it’s good….but I’ll do these as mini sandwiches with coleslaw.
MUFFIN MONDAY – I love the recipe from for zucchini, cranberry & walnut muffins. But I use Craisins…and yeah, not baking today. I opted to spend the morning swimming and playing with the girls. So making these tomorrow with the kids!
