We are in the midst of the Eastern Conference Finals, but with the Miami HEAT playing on the road I don’t have a late night until Saturday. (woo hoo!) Going to try to cook five straight nights…we’ll see. A couple of these recipes have cheese, I just don’t put it on my daughter’s, or my food.
MONDAY – Italian Meatball Sliders. Salad with balsamic dressing.
Lower Carb Meal Option: Meatballs sans bun, salad.
TUESDAY – Angel Hair Pasta Delight. What’s not to like about chicken, spinach, and tomatoes? The kids love the pasta…we omit the Asiago in this recipe.

WEDNESDAY – Black Bean and Corn Quesadillas, with chips & guac and maybe a side of rice!
Dairy-Free Meal Option: Black Beans & Rice Tacos (don’t knock it until you try it!)
THURSDAY – Marinated Skirt Steak with Green Beans and slivered almonds. Bread for the girls.
FRIDAY – Grilled Chicken and Spinach salad with bacon for the grown ups! Chicken and corn on the cob for the kids.
SATURDAY – Pizza Night! (It’s a HEAT game night…I have to work!)
SUNDAY – This may have to be an eat out night!
MUFFIN MONDAY – Banana Crumb Muffins! My kids go ga-ga for anything with a crumb topping! I usually have to cut the sugar content in muffin recipes, but this one is just perfect.
